Deck ovens also use radiant heat to penetrate and heat through the dough that is not in direct contact with the stone.
Deck ovens are available in gas or electric operations and costs to operate each can vary greatly depending on utilities in your area. When deciding, keep in mind that gas-operated deck ovens require a single temperature setting for the whole oven even if there are multiple decks.
